What each ingredient does

Smelts
The main fish, which cooks through quickly and becomes tender when fried.
Eggs
Bind the cracker crumbs to the fish so the coating stays on during frying.
Cracker crumbs
Form a crisp, golden coating that browns in the hot fat.
Lard
Conducts heat for frying, crisping the coating and browning the surface.

The step that matters

Fry the smelts in the hot lard until they are light brown. The lard must be very hot before the fish goes in. Hot fat sears the crumb coating quickly so it crisps instead of absorbing grease and turning soggy, and the fish cooks through before it dries out.
