Why it works: Allspice and ginger match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,620 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Pickles. Gherkins.
Ingredients
Directions
Prick the gherkins in several places with a needle.
Soak them in cold water with enough salt to make a strong brine for 3 hours.
Remove the gherkins and dry them with a clean cloth.
In a saucepan over low heat, combine the gherkins with strong brown pickling vinegar, allspice, half the amount of whole black pepper, a little brown ginger, and cayenne pepper.
Simmer for 15 minutes, then remove from heat and let cool.
Pour the mixture over the gherkins in a jar and seal tightly.
Let them sit for 3-4 days before using.
