Ginger Apples

Ingredients

Directions

Prepare

  1. Pare and core the Newtown pippins apples, then place them in cold water to preserve their color.

  2. In a stew pan, combine 1 pint of water and ½ pound of sugar for every pound of fruit. Bring to a boil.

Cook

  1. Remove the apples from the cold water and add them to the boiling syrup.

  2. Add 1¾ ounces of cleaned ginger for each pound of fruit.

  3. Boil until the apples become clear, about 1 hour or less.

Store

  1. If not used immediately, store in a jar with a tight lid in a cool, dry place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Newtown pippins apples
Form the main fruit, becoming clear and tender as they cook in the syrup.
Sugar
Sweetens the syrup and helps preserve the cooked apples.
Cleaned ginger
Adds a warm, spicy aroma and flavor to the apples.

The step that matters

Boil until the apples become clear. Cooking must be long enough for the apples to soften fully and turn clear, but not so long they break apart. Watching the apples rather than the clock helps, since the record gives only an approximate time of about 1 hour or less.

Swap the apple

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonfits better
  2. Orangefits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
