What each ingredient does

Indian meal
Cornmeal that thickens the water as it cooks, giving the gruel its body.
Flour
Adds additional thickening so the gruel becomes smooth and holds together.

The step that matters

Pour the mixture into the boiling water while stirring continuously. Meal and flour mixed with water will clump if dropped into hot water in one go. Adding them gradually while stirring disperses the starch so the starch granules hydrate evenly and the gruel stays smooth rather than lumpy.

Swap the nutmeg

How well each one fits the dish's main ingredients (flour, milk):

  1. Jalapenofits better
  2. Cinnamonfits better
  3. Nutmegthe original
  4. Turmericfits less well

Fit is the average pairing score against flour, milk. Candidates are from the same food group and used in at least 100 recipes.
