Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pot roast
Main cut of meat that becomes tender through long moist simmering.
Lard
Fat for browning the meat, building color and a savory crust on the surface.
Onion
Adds aromatic sweetness and flavor to the cooking liquid that becomes the sauce.
Celery
Contributes savory, vegetal aroma to the simmering liquid.

The step that matters

Brown the meat on all sides. Browning creates deep flavor through the Maillard reaction. Meat that is crowded, wet, or under-heated will steam instead, leaving a pale surface and a weaker-tasting sauce.

Swap the onion

How well each one fits the dish's main ingredients (clove, celery, cinnamon, horseradish):

  1. Mustardfits better
  2. Beetrootfits better
  3. Turnipfits better
  4. Onionthe original

Fit is the average pairing score against clove, celery, cinnamon, horseradish. Candidates are from the same food group and used in at least 100 recipes.
