The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Cut the eggplant in half and scoop out the insides.

  2. In a saucepan, combine the insides with minced ham and cover with water.

  3. Boil until very tender, then drain the water.

Bake and serve

  1. Stuff each half of the eggplant with the mixture and top with a small lump of butter.

  2. Bake at 400°F (200°C) for 15 minutes.

  3. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the edible shell and its soft flesh becomes the base of the filling.
Breadcrumbs
Absorb moisture and give the stuffing body so it holds together in the shell.
Butter
Adds richness and moisture, and helps the top brown as it bakes.
Ham
Contributes savory, salty flavor to the stuffing.

The step that matters

Boil until very tender, then drain the water. Eggplant flesh must be fully softened before stuffing, because it continues to cook only slightly in the oven and firm pieces stay tough and watery. Draining well prevents excess water from making the filling soggy.
