Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the crust

  1. Preheat the oven to 400°F (200°C).

  2. Line a pie dish with crust.

  3. Bake until golden brown.

Make the filling

  1. In a bowl, mix sugar, butter, egg yolks, lemon juice, and lemon rind.

  2. Place the mixture on the stove and add boiling water.

  3. Once boiling, stir in flour dissolved in cold water.

  4. Cook until thickened, then pour into the baked crust.

Top and brown

  1. Beat egg whites to make meringue and spread on top of the pie.

  2. Return the pie to the oven to brown the meringue.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the filling and add richness as they set with heat.
Flour
Thickens the lemon filling so it holds its shape when sliced.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Lemon juice
Provides the tart, acidic flavour that defines the pie.
Egg whites
Whipped into a foam that forms the meringue topping and browns in the oven.

The step that matters

Cook the filling until thickened. Flour and egg yolks only thicken when the mixture is brought to a boil and kept cooking. Undercooked filling stays runny and may not set when chilled or cut.
