Sugar
Dissolved in boiling water to make a syrup that sweetens the sherbet and softens its icy texture.
Lemons
Their juice adds acidity that balances the sweetness and brightens the flavour.
Pineapple
Crushed pineapple supplies the main fruit flavour and moisture.
Lemon rind
Steeped in the hot syrup, it adds citrus aroma.
