Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Provides the main flavour and, once pureed, the body of the soup.
Butter
Adds fat and richness, and carries flavour through the soup base.
All-purpose flour
Cooked with the butter to form a roux that thickens the soup.
Milk
Adds liquid and creaminess, softening the soup's flavour and texture.
Heavy cream
Adds fat for a smoother, richer mouthfeel.

The step that matters

Cooking the flour mixture. Cooking the butter and flour until frothy cooks out raw starch taste and lets the roux thicken the liquid evenly, so the soup avoids lumps and a pasty flavour.
