Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Form the main body of the croquette, giving a soft, tender interior.
Cream
Adds moisture so the minced filling holds together softly rather than drying out.
Egg
Binds the coating so the cracker crumbs adhere to the croquette.
Cracker crumbs
Form a crisp outer crust that browns during frying.
Lard
Conducts heat for frying and promotes browning of the crumb coating.

The step that matters

Make the filling very moist. Finely chopped cooked sweetbreads dry out easily; enough cream keeps the interior tender and helps the mixture hold its shape when rolled and fried.

Swap the celery

How well each one fits the dish's main ingredients (pepper, cream, egg):

  1. Nutmegfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Celerythe original

Fit is the average pairing score against pepper, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
