Peach Meringue

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and bake

  1. Line your pans with puff pastry.

  2. Fill with halved canned peaches and sweeten to taste.

  3. Bake for 15 minutes at 350°F (175°C).

Top and brown

  1. Make a meringue by beating egg whites and powdered sugar.

  2. Place a tablespoon of meringue on each half peach.

  3. Return to the oven for a few minutes to brown slightly.

What each ingredient does

Puff pastry
Forms the crisp, flaky base that holds the peaches.
Canned peaches
Provide the fruit filling and its sweet, juicy flavor.
Egg whites
Whipped into a foam that forms the light meringue topping.
Powdered sugar
Sweetens the meringue and helps it hold its shape.

The step that matters

Browning the meringue. Meringue can go from golden to burnt quickly in a hot oven, so watch it closely for just a slight browning. Overbaking makes it weep, shrink, and taste bitter.

Swap the peach

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Peachthe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
