Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the sauce and thickens the syrup as it boils down.
Egg yolks
Thicken the sauce as they cook gently, giving it a smooth, creamy body.
Lemon juice
Adds acidity and bright flavour that balances the sweetness.
Lemon rind
Adds aromatic lemon oils that flavour the syrup.

The step that matters

Stir the egg yolks into the syrup and beat rapidly. Egg yolks scramble if they meet hot syrup too quickly or sit still. Beating rapidly while adding them spreads the heat evenly, so the sauce thickens smoothly instead of curdling.
