What each ingredient does

Gelatine
Sets the mixture so it holds its shape when frozen and sliced.
Heavy cream
Provides fat and whipped air bubbles that give a light, creamy texture.
Powdered sugar
Adds sweetness and dissolves easily into the cream mixture.
Sherry wine
Adds aroma and a subtle acidic, fruity flavour.

The step that matters

Slowly add the melted gelatine to the whipped cream. Gelatine added quickly or while still hot can seize into strands or deflate the whipped cream. Adding it slowly, and while it is liquid but not hot, lets it disperse evenly so the frozen texture stays smooth and light.
