Almond Tart

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. Beat the powdered sugar and egg yolks together until light.

  2. Add the lemon juice and grated rind, and mix well.

  3. Combine the cornstarch with the grated almonds and fold into the mixture.

  4. Beat the mixture for 45 minutes.

Bake and cool

  1. Pour into a pan that opens from the bottom and bake.

  2. Do not turn out the tart; leave it in the pan to cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the bulk and nutty flavour of the tart, setting its dense, moist crumb.
Eggs
Egg yolks enrich and bind the batter, while the whites help the tart rise and set.
Powdered sugar
Sweetens the tart and dissolves easily into the yolks for a smooth, light base.
Cornstarch
Adds structure and helps the tart hold together and set when baked.

The step that matters

Beat the mixture for 45 minutes. Long beating traps air in the eggs and sugar, which gives the batter its lightness. Under-beating leaves a dense tart, so keep beating for the full time rather than stopping early.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar, lemon):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against egg, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
