Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash and peel the sweet potatoes, then cut them into ⅓ inch slices.

  2. Arrange the slices on skewers in groups of three or four.

  3. Parboil the skewered potatoes for six minutes and then drain them.

  4. Brush the potatoes with melted butter and sprinkle with brown sugar.

  5. Bake in a hot oven at 400°F (200°C) until well browned.
