Oyster Sandwich Filling

Ingredients

Directions

Prepare the oysters

  1. Remove the tough muscle from the oysters and chop them finely using a food chopper.

Make the filling

  1. In a saucepan, combine the chopped oysters, salt, white pepper, Tabasco, cracker dust, and butter.

  2. Stir and heat the mixture until steaming.

  3. In a bowl, beat the egg yolks with the cream, then add to the saucepan and stir until thickened.

  4. If the mixture is too liquid, add more cracker dust.

  5. Remove from heat, add lemon juice, and adjust seasoning if needed.

  6. Let cool before using.

What each ingredient does

Oysters
Provide the main body and briny flavour of the filling.
Egg yolks
Thicken the mixture as they heat and set into a creamy texture.
Cream
Adds richness and moisture, softening the filling as it thickens with the yolks.
Butter
Adds fat for richness and a smooth mouthfeel.
Cracker dust
Absorbs liquid and gives the filling body, so it can be adjusted if too loose.

The step that matters

Adding the egg yolk and cream mixture. Egg yolks thicken when heated gently but can scramble if the mixture is too hot. Adding them to the warm saucepan while stirring steadily helps them thicken smoothly into a custard-like texture.

Swap the white pepper
