Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Its starch swells and thickens the milk, giving the pudding its body and soft, creamy texture.
Milk
Forms the liquid base that the rice cooks in, and its proteins and sugars help the pudding set creamy and brown.
Butter
Adds fat, which gives the pudding richness and a smooth mouthfeel.
Sugar
Adds sweetness and helps the top brown during baking.

The step that matters

Simmering with gentle stirring. Milk contains sugars and proteins that scorch easily on the bottom of a pot. Stirring gently and keeping the heat low prevents sticking and burning while the rice softens and thickens the liquid.

Swap the nutmeg

How well each one fits the dish's main ingredients (rice, milk, butter, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Turmericfits less well

Fit is the average pairing score against rice, milk, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
