Apple Dumplings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Sift the flour, salt, and baking powder together.

  2. Cut the butter into the flour mixture.

  3. Add the sweet milk and mix until combined.

  4. Roll the dough on a floured surface to ½ inch thick.

  5. Cut the dough into squares about 5 or 6 inches wide.

Assemble the dumplings

  1. Place a peeled and cored apple in the center of each square.

  2. Fill the hollow of each apple with granulated sugar and add a few drops of lemon juice.

  3. Fold the corners of the dough over the apple and pinch them together on top.

  4. Place the dumplings in a buttered pan with the seams facing down.

Bake and serve

  1. Bake in a 350°F (175°C) oven until golden brown.

  2. Brush the dumplings with beaten egg white and return to the oven to glaze.

  3. Remove from the oven, sift powdered sugar over them, and serve hot with hard sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the dough structure that encloses the apple and holds its shape while baking.
Butter
Cut into the flour to add tenderness and richness to the dough.
Baking powder
Releases gas during baking so the dough rises and becomes light.
Sweet milk
Hydrates the flour to form a cohesive dough and adds moisture.
Apples
Provide the tender, moist fruit filling that cooks inside the dough.
Egg white (in the method)
Brushed on before the final bake to give the dumplings a glossy, browned glaze.

The step that matters

Pinch the dough seams closed and place them seam-side down. Sealed seams keep the sugar and apple juices inside as they cook. Seam-side down placement keeps the seam from opening and leaking during baking.

Swap the lemon

How well each one fits the dish's main ingredients (flour, butter, milk, apple, sugar):

  1. Vanillafits better
