Strawberry Shortcake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the cake

  1. Prepare baking powder biscuit dough or sponge cake and bake in jelly pan tins at 350°F (175°C).

  2. Cut the baked cake into two layers.

Assemble

  1. Sweeten the halved strawberries and place them between the layers and on top of the cake.

  2. Cover the strawberries on top with whipped cream and scatter whole berries on top.

Make and serve the sauce

  1. Make a sauce by mashing one box of strawberries thoroughly and sweetening with sugar.

  2. Chill the sauce until thoroughly cold and serve it poured over the shortcake.

What each ingredient does

Baking powder biscuit dough or sponge cake
Forms the base layers that hold the fruit and cream.
Strawberries
Provide sweet, tart flavor and moisture through the cake and sauce.
Sugar
Sweetens the strawberries and sauce, and draws out their juices.
Whipped cream
Adds richness and a soft, airy texture between and over the layers.

The step that matters

Chill the sauce until thoroughly cold. Mashed strawberries and sugar stay loose and watery when warm; chilling thickens the sauce slightly and keeps the cream and cake from softening too quickly.
