  1. Make a brine by mixing 1 gallon of water with 1 cup of fine salt.

  2. Pour the hot brine over the cucumbers for 9 mornings.

  3. Rinse the cucumbers in cold water and scald them in alum water.

  4. Place the cucumbers in vinegar with spices and nearly boil.

  5. Add peppers and onions if desired.
