Season and serve

  1. Remove from the oven and sprinkle with coarse sea salt to taste.

What each ingredient does

Peanuts
Main ingredient that browns in the oven, developing a toasted, nutty flavor and crisp texture.

The step that matters

Salting after roasting. Salt sprinkled on hot nuts sticks to the oiled surface and dissolves into it, so it is applied straight out of the oven. Salt added before roasting can dull the browning and makes the seasoning less even.
