What each ingredient does

Magic yeast cake
Produces carbon dioxide during fermentation, which makes the dough rise and become light.
Potatoes
Add moisture and starch, giving the bread a soft, tender crumb.
Flour
Forms the gluten network that traps gas and gives the bread its structure.
Sugar
Feeds the yeast and helps the crust brown during baking.

The step that matters

Leaving the mixture overnight. Long, slow fermentation lets the yeast develop flavor and gas gradually. Too short a rest leaves the dough dense; the stiff batter needs time to become active before shaping.

Swap the potato

How well each one fits the dish's main ingredients (sugar, flour):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
