Potato Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the mashed potatoes, sweet milk, ground chocolate, walnuts, cinnamon, nutmeg, baking powder, and salt.

  5. Gradually add the flour, mixing until just combined.

Bake

  1. Pour the batter into a greased cake pan and smooth the top.

  2. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to trap air and give the cake a tender, rich texture.
Eggs
Add structure and help bind the batter as the cake sets.
Flour
Forms the cake's main structure once it is mixed in and baked.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Mashed potatoes
Add moisture so the cake stays soft and moist after baking.

The step that matters

Mixing the flour in gently. Once flour is added, overmixing develops gluten and makes the cake tough and dense, so it should be mixed only until just combined.

Swap the potato

How well each one fits the dish's main ingredients (sugar, flour, butter, walnut, chocolate, milk, egg):
