Why it works: Lobster and cream are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 1,050 recipes. Both carry 1-octen-3-one, which smells mushroom, metallic. The science ↓
Lobster Cutlets
Ingredients
Directions
Take a small hen-lobster and place it on a board.
Use a chopper to break the shell by hitting it with the blade.
Remove the shell from the claws and back, and extract the flesh.
Cut the lobster flesh into small dice-sized pieces.
If it's a hen-lobster, remove the coral from the neck and back.
Wash the coral in cold water in a small basin.
Place the coral in a mortar with 1 ounce of butter and pound well.
Scrape the mixture clean from the mortar with a palette knife or raw potato slice.
Pass the pounded mixture through a hair sieve over a plate.
Scrape off any mixture stuck inside the sieve.
Form the mixture into a small pat.
In a stewpan, mix 1 ounce of flour and ½ ounce of butter with a wooden spoon.
Add ½ cup of cold water and place the stewpan on the fire.
