To Boil Rice

Ingredients

Directions

Prepare the rice

  1. In a large stewpan, pour in 4 quarts of water and bring it to a boil.

  2. Wash the rice in a basin of cold water, draining and rubbing it with your hands.

  3. Pick out any yellow grains or bits of black, and wash the rice four times.

  4. Just before boiling, pour fresh cold water over the rice.

Boil and test

  1. Once the water is boiling, add the rice and stir with a spoon.

  2. Add ¼ teaspoon of salt to help the scum rise, and skim it occasionally.

  3. Boil the rice for 15 to 20 minutes.

  4. To test if the rice is done, press a grain between your thumb and finger; it should mash easily.

Drain and dry

  1. Drain the rice in a colander.

  2. Rinse the rice under cold water for 1-2 seconds to separate the grains.

  3. Transfer the drained rice to a clean, dry stewpan at the side of the fire.

  4. Cover the stewpan partially with a lid and stir occasionally to prevent sticking.

  5. Once the rice is dry, carefully serve it on a hot dish.

What each ingredient does

Rice
Forms the bulk of the dish; its starch gelatinises as it cooks, giving the grains their soft, tender texture.
Water
Cooks the rice by simmering and hydrating the grains until they soften.

The step that matters

Testing for doneness. Rice keeps absorbing water and softening after it leaves the pot, and undercooked centres stay firm. Pressing a grain to check it mashes easily shows whether the starch has fully cooked through.
