What each ingredient does

Macaroni
Forms the body of the dish and absorbs the stock as it simmers, giving it a soft, thick texture.
Stock
Supplies the liquid that the macaroni absorbs, carrying the flavour through the dish.

The step that matters

Draining and rinsing the macaroni completely. Excess cold water left on the pasta dilutes the stock when it is added, so the stew can turn thin and watery. Draining well keeps the liquid concentrated and the texture thick.
