Strawberry Cream

Ingredients

Directions

Prepare the fruit

  1. Place the strawberries on a board and remove any bad ones.

  2. Stalk the strawberries and place them in a basin.

  3. Sprinkle 2 tablespoons of powdered sugar over the strawberries to draw out the juice.

  4. Use a silk sieve over a basin to strain the fruit with a wooden spoon.

Make the gelatine base

  1. Soak ½ ounce of gelatine in ¼ cup of cold water in a small saucepan.

  2. Heat the saucepan and stir until the gelatine is melted.

  3. Add 2 ounces of powdered sugar and the strained lemon juice to the saucepan.

  4. Strain this mixture into the basin with the strawberries and mix well.

Add cream and set

  1. Whip ½ pint of cream in a basin until stiff.

  2. Gently fold the whipped cream into the strawberry mixture.

  3. Scald a pint mold with hot water, then rinse with cold water.

  4. Pour the strawberry cream into the mold and chill in ice until ready to serve.

Serve

  1. To serve, dip the mold in boiling water for a second, shake to loosen, and turn out onto a dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavour and the fruit body of the cream.
Gelatine
Sets the mixture so it holds its shape when turned out of the mold.
Cream
Whipped to add lightness and a smooth, rich texture.
Powdered sugar
Sweetens the fruit and draws out its juice.
Lemon juice
Adds acidity that brightens the strawberry flavour.

The step that matters

Gently fold the whipped cream into the strawberry mixture. Whipped cream holds air in small bubbles. Vigorous stirring knocks that air out, leaving a dense, heavy cream instead of a light one. Folding keeps the air intact.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream):
