Why it works: Pepper and vinegar are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 27,814 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Poached Eggs
Ingredients
Directions
Poach the eggs
Fill a deep frying pan nearly full of hot water and add 1 teaspoon of salt. Let it boil gently.
Optionally, add 1 to 2 tablespoons of vinegar to the poaching water.
Break each egg into a saucer and slide it slowly into the water. Cook by itself, pouring a little water gently over it with a teaspoon.
Serve
When done, lift the egg out with a skimmer and place it on a slice of hot buttered toast.
Sprinkle with a little pepper and coarse sea salt, and trim the edges nicely.
The toast may be dry or wet by quickly dipping it into hot water.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Set protein forms the poached white and holds the yolk, giving a tender, cohesive texture.
- Buttered toast
- Provides a crisp, absorbent base that soaks up the yolk and adds fat and browning.
The step that matters
Slide the egg slowly into gently boiling water. Dropping the egg in too fast or into a rolling boil scatters the whites and tears the shape. Gentle heat lets the white set around the yolk while it keeps its form.
