Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Make the starter

  1. Boil and mash the potatoes very fine.

  2. Add water, salt, sugar, and yeast.

  3. Stir in enough flour to make a moderately stiff batter.

  4. Cover and let it stand overnight.

Make the dough

  1. In the morning, stir down and let it rise again.

  2. Add warm water and lard.

  3. Mix in flour and knead well.

  4. Let it rise.

  5. Mold into pans.

Bake

  1. Bake in a moderate oven (350°F or 175°C) when light.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Their starch and water add moisture and body to the dough.
Yeast
Ferments sugars in the batter, producing gas that makes the bread rise.
Flour
Forms gluten when kneaded, giving the bread its structure and chew.
Lard
Adds fat that tenderizes the crumb and softens the texture.
Sugar
Feeds the yeast and adds a little sweetness and browning.

The step that matters

Knead well after adding flour. Kneading develops gluten strands that trap the gas yeast produces. Under-kneading leaves a weak structure that cannot hold the rise, so the loaf may collapse or bake dense.

Swap the potato

How well each one fits the dish's main ingredients (sugar, flour):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
