Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Roll the lemon and squeeze the juice over half of the sugar.

  2. Beat the egg yolks and mix in the lemon juice, butter, and milk.

  3. Pour the mixture into a pie crust and bake in a 350°F (175°C) oven.

Make and brown the meringue

  1. Beat the egg whites with the remaining sugar until stiff peaks form.

  2. Spread the meringue over the baked pie and return to the oven to brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the filling and whites whip into a stable meringue topping.
Sugar
Sweetens the filling and helps the egg whites hold stiff peaks in the meringue.
Lemon
Provides the acidity and aroma that give the filling its tart flavor.
Milk
Adds moisture and richness to the filling.

The step that matters

Beating the egg whites to stiff peaks. Whites must be whipped until stiff and the sugar fully dissolved, or the meringue will weep or collapse. Browning it in the oven then sets the topping.
