Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Prepare a puff pastry crust and lay it in a pie pan.

  3. Season the meat with pepper, coarse sea salt, mace, cloves, and nutmeg.

  4. Layer the seasoned meat in the crust with lamb stones, sweetbread, oysters, forced meatballs, hard-boiled egg yolks, and boiled asparagus tops.

  5. Dot the filling with butter, cover with the top crust, and bake for 1.5 hours.

  6. For the liquor, mix gravy, oyster liquor, red wine, and grated nutmeg in a pot.

  7. Beat in egg yolks and stir continuously until boiling.

  8. Pour the liquor into the pie, cover again, and serve hot.
