Boiled Salt Codfish
Ingredients
Directions
Soak the fish in tepid water for 12 hours or longer if necessary.
Scale and cleanse the fish, ensuring no salt crystals remain.
Cut the fish into slices and place it in a pot.
Cover the fish with cold water and set it on low heat.
Remove the scum as it rises.
When it boils, if not cooked, change the water and bring it to a boil again.
Drain the fish well, separate the flakes, and place it in a hot dish.
Pour over a sauce (see Sauces for Boiled Fish) and serve.
