Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut the meat and stew it with the onions in the meat's jelly.

  2. Boil or steam the potatoes, then mash them.

  3. Grease a baking dish and line the sides with some of the mashed potatoes.

Assemble and bake

  1. Place the stewed meat and onions in the center, then season with salt and pepper.

  2. Cover with the remaining mashed potatoes and bake at 400°F (200°C) until the top is brown.

  3. After baking, pour in about 2 pints of gravy made from the onion cooking liquid.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat
Forms the savory filling, becoming tender through slow stewing in its own jelly.
Potatoes
Form the mashed crust that encloses the filling and browns on top in the oven.
Onions
Add sweetness and aroma to the stewed filling and to the cooking liquid used for gravy.
Gravy
Adds moisture to the finished pie, made from the onion cooking liquid.

The step that matters

Browning the top crust. The top should be baked until brown, which depends on oven heat and the moisture in the mashed potatoes. Underbaking leaves it pale and soft, while overbaking can dry it out.

Swap the onion

How well each one fits the dish's main ingredients (meat, potato, pepper):

  1. Capsicumfits better
  2. Carrotfits better
  3. Asparagusfits about as well
  4. Onionthe original

Fit is the average pairing score against meat, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
