Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green celery stalks
Form the main body of the dish and soften into tender pieces when boiled.
Dripping
Adds fat and rich flavour to the sauce and carries the flour.
Flour
Thickens the dripping and reserved water into a smooth sauce.

The step that matters

Mixing the flour into the melted dripping. Flour must be stirred in evenly so it cooks into a smooth roux; adding the liquid too quickly or without stirring can leave lumps.

Swap the celery

How well each one fits the dish's main ingredients (butter, flour, pepper):

  1. Parsleyfits better
  2. Turmericfits better
  3. Nutmegfits better
  4. Celerythe original

Fit is the average pairing score against butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
