Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White potato
Grated potato forms the body of the filling, thickening it as it bakes.
Egg whites
Beaten whites set into a light, airy topping that browns lightly in the oven.
White sugar
Sweetens the filling and helps it set and brown.
Lemon
Juice and rind add acidity and bright citrus aroma to the filling.
Powdered sugar
Sweetens the meringue-style topping and helps it stay smooth.

The step that matters

Browning the egg white topping. Beaten egg whites can deflate or weep if under-whipped or left too long, and they brown quickly, so watch them closely in the oven to brown lightly without over-colouring.

Swap the potato

How well each one fits the dish's main ingredients (lemon, egg, sugar, rose, currant):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Capsicumfits better
  4. Potatothe original
