What each ingredient does

Gelatin
Sets the liquid into a jelly that holds its shape when cold.
Egg whites
Beaten in as the gelatin cools, adding airy lightness to the jelly as it sets.
Sugar
Sweetens the jelly and balances the sharpness of the lemon juice.
Lemon juice
Adds acidity that brightens the sweetness and freshens the flavor.
Peaches
Provide the fruit flavor and form the base the jelly is poured over.

The step that matters

Add the egg whites when the gelatin is nearly cold. If the mixture is still hot, the beaten egg whites will cook partly and deflate, and the jelly will not set evenly. Waiting until it is nearly cold keeps the foam stable while the gelatin begins to thicken.

Swap the lemon

How well each one fits the dish's main ingredients (gelatin, sugar, egg, peach, chocolate, cream):

  1. Vanillafits better
  2. Raspberryfits better
  3. Strawberryfits better
  4. Lemonthe original

Fit is the average pairing score against gelatin, sugar, egg, peach, chocolate, cream. Candidates are from the same food group and used in at least 100 recipes.
