Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the lemon juice, grated rind, beaten eggs, flour, sugar, and water until well combined.

  3. Pour the mixture into a pie tin lined with the rich pie crust.

  4. Bake until the filling is set.

Make the meringue and finish

  1. In another bowl, beat the egg whites until stiff peaks form, then gradually add a bit of sugar.

  2. Spread the meringue over the pie and lightly brown it in the oven.

  3. Serve once cooled.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs set the lemon filling into a sliceable custard as they cook.
Flour
Thickens the lemon filling so it holds its shape when cut.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Lemon juice
Provides the acidity and bright flavour of the filling.
Egg whites
Whipped into stiff peaks to form the airy meringue topping that browns in the oven.

The step that matters

Bake until the filling is set. Egg proteins coagulate as they heat, so the filling needs enough time to firm up. Underbaked filling stays runny and will not slice cleanly once cooled.

Swap the lemon

How well each one fits the dish's main ingredients (egg, flour, sugar):

  1. Raisinfits better
  2. Vanillafits better
  3. Lemonthe original
  4. Figfits about as well

Fit is the average pairing score against egg, flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
