What each ingredient does
- Cranberries
- Their pectin and skins break down during cooking, giving the sauce body and a tart flavor.
- Granulated sugar
- Sweetens the cranberries and helps them set into a firm, gel-like mass as they cool.
The step that matters
Cooking until the cranberries burst. Stirring continuously until the fruit breaks down releases enough pectin for the mixture to thicken and hold its shape. Undercooked cranberries stay firm and will not set properly in the mold.
