Directions

Make the filling

  1. Grind the nuts and dates very fine in a food chopper to make a paste. You should have about 1 cup of mixture.

  2. Add the boiling water, sugar, and lemon juice to the mixture.

  3. Mix well and cook in a double boiler for 10 minutes or until thick.

Assemble

  1. Spread warm between layers of fresh cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dates
Provide natural sweetness and a soft, paste-like body that thickens the filling.
Nuts
Add body, texture and a toasty flavour to the filling.
Sugar
Adds sweetness and helps the filling thicken as it cooks.
Lemon juice
Adds acidity that brightens the sweetness of the dates and sugar.

The step that matters

Cook in a double boiler until thick. Gentle, indirect heat lets the filling thicken evenly without scorching the sugar and dates. Cooking too hard or too long can make it stiff or sticky once cooled, so it should be checked for thickness rather than relying only on the timer.

Swap the lemon

How well each one fits the dish's main ingredients (dates, nuts, sugar):
