Almond Pudding

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Finely grind the almonds in a mortar.

  2. In a bowl, beat the egg yolks until thick and lemon colored.

  3. Add the sugar, lemon juice, and cake crumbs to the yolk mixture.

  4. Fold in the stiffly beaten egg whites.

Bake

  1. Pour the mixture into a baking dish and bake at 300°F (150°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and set the custard, while whites add air for a light, rising texture.
Almonds
Provide the main body and nutty flavor of the pudding.
Sugar
Adds sweetness and helps tenderize the pudding.
Cake crumbs
Add bulk and absorb liquid, giving the pudding a soft, moist crumb.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.

The step that matters

Folding in the egg whites. Stiffly beaten whites hold trapped air that lightens the pudding as it bakes. Stirring vigorously or overmixing deflates the foam, leaving a dense, heavy result.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg, lemon):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
