Add the bananas and serve

  1. Peel the very ripe bananas, scrape them, and pass through a coarse sieve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bananas
Provide the main flavour and the pulp that gives the whip its body.
Granulated gelatine
Sets the liquid mixture into a light, wobbly structure that holds air when beaten.
Granulated sugar
Sweetens the dish and balances the sharpness of the lemon.
Lemon juice
Adds acidity that brightens the sweet banana flavour.

The step that matters

Chill the jelly until cold before beating. Gelatine must be cold and only partly set before beating; if it is still warm or fully firm, it will not trap air well or blend smoothly with the banana pulp.

Swap the banana

How well each one fits the dish's main ingredients (lemon, sugar):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits better
  4. Bananathe original

Fit is the average pairing score against lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
