Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Forms the gel network that makes the juice set into a firm, sliceable jelly.
Grape juice
Provides the main flavour and liquid that the gel sets in.
Sugar
Adds sweetness and balances the tartness of the grape juice and lemon.
Lemon juice
Adds acidity that brightens the grape flavour and sharpens the sweetness.

The step that matters

Dissolve the softened gelatine in boiling water. Gelatine must be fully dissolved and not boiled, since boiling can weaken its gelling power. Stirring until no granules remain gives an even set without grainy or weak spots.

Swap the grape

How well each one fits the dish's main ingredients (lemon, sugar):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits better
  4. Grapethe original

Fit is the average pairing score against lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
