Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Whipped to trap air, giving the parfait a light, creamy body.
Egg whites
Whipped with hot syrup to form a stable foam that gives structure and lightness.
Sugar
Dissolved into syrup to sweeten the dessert and help stabilize the egg white foam.
Grape juice
Adds fruit flavor, sweetness and moisture to the cream mixture.
Lemon juice
Adds acidity that brightens the sweetness of the grape juice and sugar.

The step that matters

Pouring the hot syrup over the egg whites. The syrup must be poured slowly while beating constantly so it cooks the egg whites into a stable foam. Pouring too fast can deflate the whites or leave them unevenly cooked.

Swap the grape

How well each one fits the dish's main ingredients (cream, sugar, lemon, egg):

  1. Vanillafits better
  2. Raspberryfits better
  3. Orangefits better
  4. Grapethe original

Fit is the average pairing score against cream, sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
