Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Provides the sweetness and molasses flavor that gives the sauce its character.
Egg
The beaten white forms a foam that gives the sauce a light, airy texture.
Lemon
Its juice adds acidity that brightens the sweetness of the brown sugar.

The step that matters

Pour the syrup slowly while beating. Hot syrup cooks and sets the egg white proteins, and pouring it in a thin stream while beating keeps the foam from collapsing and prevents lumps of cooked egg.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
