What each ingredient does

Carrots
Provide the main body, sweetness and flavour of the soup.
Onions
Add savoury depth and aroma as they soften in the milk.
Flour
Thickens the soup with the butter as a roux-style paste.
Butter
Adds richness and helps the flour blend smoothly into the soup.
Milk
Forms the creamy liquid base that cooks the vegetables.
Cream
Adds richness and a smooth, silky mouthfeel at the end.

The step that matters

Blend the flour and butter until very smooth. Lumps of flour stay lumpy when added to hot liquid because starch grains clump before they disperse. Mixing flour fully with the butter first lets it disperse evenly and thicken the soup smoothly.

Swap the onion

How well each one fits the dish's main ingredients (carrot, sugar, flour, celery, butter, milk, cream):
