Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil the sweet potatoes until tender, then peel and slice them lengthwise.

  2. In a deep baking dish, layer the sweet potatoes, brown sugar, and bits of butter alternately.

  3. Pour a little water over the layers.

  4. Bake in a slow oven at 300°F (150°C) for 1 hour, or until a thick syrup forms.
