Columbus Eggs

Ingredients

Directions

Prepare the eggs

  1. Remove the shells from the hard-boiled eggs and cut each egg in half around the center.

  2. Trim a little from the small end of each half so they can stand upright.

Fill and assemble

  1. Pulverize half of the yolks and mix with finely-chopped nuts, moistening with mayonnaise dressing.

  2. Fill the empty egg whites with the yolk mixture, being careful not to break them.

  3. Press the two halves together and place them on a plate to resemble whole eggs.

Top and garnish

  1. Pulverize the remaining yolks through a sieve.

  2. Mix the pulverized yolks with ½ cup of mayonnaise dressing and the chopped olives, then pour this mixture over the eggs.

  3. Sprinkle the remaining pulverized yolks on top and garnish with watercress or parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Provide the whites that hold the filling and the yolks that form the stuffing and topping.
Mayonnaise dressing
Moistens the yolks, binding them into a smooth, spreadable filling and sauce.
Finely-chopped nuts
Add crunch and texture to the yolk filling.
Chopped olives
Add salty, briny flavour to the topping mixture.

The step that matters

Filling the egg whites without breaking them. Egg whites are delicate and tear easily when handled. A torn white leaks filling and loses its shape, so handle them gently and fill them carefully.

Swap the nuts

How well each one fits the dish's main ingredients (egg, olive, watercress):

  1. Cashew nutfits better
  2. Sesamefits better
  3. Chestnutfits better
  4. Nutsthe original

Fit is the average pairing score against egg, olive, watercress. Candidates are from the same food group and used in at least 100 recipes.
