Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine the whole-wheat flour and fine salt.

  3. Stir in the beaten egg yolks and sweet milk until well mixed.

  4. Gently fold in the beaten egg whites.

  5. Pour the batter into a greased muffin tin.

Bake

  1. Bake for 25 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole-wheat flour
Provides the structure of the muffins, with more bran and texture than white flour.
Egg yolks
Add richness and fat, and help bind the batter together.
Sweet milk
Hydrates the flour and gives the batter its moisture and tender crumb.
Egg whites
Whipped to a froth, they trap air that helps the muffins rise and stay light.

The step that matters

Gently fold in the beaten egg whites. Whipped egg whites hold air that gives the muffins lift. Stirring vigorously deflates them, which leaves dense, flat muffins.
