Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the batter
Beat the yolks of 8 eggs and gradually add 1½ cups of sugar and the grated rind of 1 lemon.
In a separate bowl, beat the whites of 8 eggs to a stiff froth.
In a third bowl, mix the egg whites with the sugared yolks, adding 3½ cups of flour alternately and gently.
Stir gently just enough to mix well, then add the juice of 1 lemon.
Bake
Divide the batter into 2 loaves and bake for 20 minutes at 350°F (175°C).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg yolks
- Add richness, colour and moisture, and help the cake set.
- Egg whites
- Whipped to a stiff froth, they trap air that lifts the batter as it bakes.
- Flour
- Provides the structure that holds the cake once the egg foam sets.
- Sugar
- Sweetens the batter and helps stabilise the yolks as they are beaten.
The step that matters
Folding the whites into the yolks. Mixing too vigorously knocks out the air whipped into the egg whites, so the cake rises less and turns out dense. Stir gently and only until just combined.
Swap the lemon

- Figfits about as well
Fit is the average pairing score against egg, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
