Directions

Prepare the liver

  1. Cut the liver into slices half an inch thick.

  2. Pour boiling water over the liver and then drain it completely.

Cook and make the gravy

  1. Let the liver brown in its own juices, turning until browned on both sides.

  2. Add enough cold water to the frying pan to make gravy.

  3. Add a small amount of onion, salt, nutmeg, and a bit of butter.

  4. Boil once, then return the liver to the pan for one more minute.

What each ingredient does

Liver
Provides the main body and rich flavour of the dish once browned.
Butter
Adds fat and richness to the gravy and helps the liver brown.
Onion
Adds savoury sweetness and aroma to the gravy.

The step that matters

Let the liver brown in its own juices. Browning depends on surface moisture being driven off so the meat sears rather than steams. Drain the liver well after the boiling water, and turn it only once it has a crust, so it develops flavour instead of turning grey and tough.

Swap the nutmeg

How well each one fits the dish's main ingredients (liver, onion, butter):

  1. Garlicfits better
  2. Thymefits better
  3. Capersfits better
  4. Nutmegthe original
